🥗 Ingredients:

  • 1 large ripe avocado, mashed

  • 1.5 cups cooked shredded chicken breast (grilled or rotisserie)

  • 2 tbsp olive oil or avocado oil

  • 1 tbsp lemon juice (fresh is best!)

  • 1 small cucumber, diced

  • 2 tbsp red onion, finely chopped

  • 1 tbsp fresh cilantro or parsley (optional)

  • Salt & pepper to taste

  • Optional: dash of garlic powder or paprika for flavor

👩‍🍳 Instructions:

  1. In a large bowl, mash the avocado until smooth.

  2. Add in olive oil, lemon juice, salt, pepper, and optional spices—mix well.

  3. Toss in the shredded chicken, diced cucumber, red onion, and herbs.

  4. Mix everything together until well combined.

  5. Serve chilled in lettuce wraps, over greens, or eat straight with a spoon!
